We know our Tuna!



Expert Tip:
The best way to sear tuna on a BBQ is over charcoal or on burning coconut shells – this adds a great flavor to the fish.


Traditional Maldivian dishes are all about seafood and mostly tuna. So we definitely know how to do our Tuna right!

Executive Chef at The Sun Siyam Iru Fushi Maldives – Stephen Wheeler, shares his secret recipe on how how to do the right BBQ Tuna Steak!

160 gm Tuna Steak
5 ml Dark Soy Sauce
10 gm Fresh Ginger (Finely Chopped)
10 ml Extra Virgin Olive Oil
1 each Lemon

1. For the BBQ, use dry coconut shells instead of charcoal. This adds a great flavor to the tuna.
2. Marinate tuna with the olive oil, soy & fresh ginger for 20 minutes, then grill for 2/3 minutes on each side until medium rare.
3. Leave to rest for about 3 – 5 minutes.
4. Serve with a fresh green salad
